The trick here is to fry it slow with a little water in the pan. Then brown the sausage to suite your taste.
SKILLET - Heat a pan to medium temperature. Add 3 tablespoons water and place links in a pan. Cover the pan, continue heating for 10-12 minutes, turning the links often. Remove cover and continue cooking for 15-17 minutes or until golden brown. You can even brown it up on your grill.
GAS GRILL - You want to keep the flame off the sausages and cook over low heat. Pre-heat gas grill to a low heat. Place links on grill over medium flame for 25-30 minutes. Don't fork the sausage! It allows the juices to run out. Use tongs to turn links often until golden brown.
CHARCOAL GRILL - Allow the charcoal to burn until it is white-ash glowing embers. Place links on the rack about 7-9 inches above fire. Use tongs to turn links often until golden brown. Allow 25-30 minutes to cook thoroughly, keeping grill covered.

If your barbecue has a lid...
Why not try the indirect method of cooking Colosimo sausages?
Keep the heat low and the lid on your BBQ closed as much as you can. Just turn the sausages every ten minutes until cooked. No drip tray is necessary.
You should be able to produce evenly cooked sausages.

OVEN - Bake at 325 degrees.. Allow 15-20 minutes to cook thoroughly.

Grandpa Ralph brought his recipe for Calabrese sausage from Italy and we've been expanding on it ever since. Ralph carried little in his pocket, but what was in his head was the recipe on how to prepare, season and create Italian sausage. One thing was sure, it wasn't written down anywhere. Grandpa Ralph, like many great chefs, would season food by how he felt,or how it tasted, or his memories of how the sausage was prepared when he was a little boy during those warm summer days in Calabria, Italy.
